In the countryside
As the fruit colours on the vine, the grapes thin out considerably and are kept on the vine until extremely late ripening occurs. The harvest is carried out by hand, placing the grapes in small boxes, between late October and November.
In the cellar
The four varieties are vinified separately at a controlled temperature. Maceration lasts for 20 days. Refinement occurs partly in steel (40%) and partly in large casks and barriques (60%). Blending and bottling 18 months after the harvest. The wine ages in the bottle for a further 6 months before being sold.
In the glass
Intense garnet red. Aromas of ripe fruit and jam, followed by nuances of vegetation and spices. Full-bodied, velvety and packing a punch to the palate, this wine enjoys a wealth of mature and gentle tannins.
Spicy red meat, roasted meat, kebabs and game.
