In the countryside
The grapes are gathered by hand and laid in small boxes. The Chardonnay are harvested in September, at their moderate technological ripening, while the Trebbiano, following bunch thinning, are picked from mid-October onwards, at an advanced stage of ripening, often bearing noble rot.
In the cellar
Vinification and refinement both take place entirely in steel vats at a controlled temperature. The two harvests, kept separate, mature on the noble lees for 6 months before being blended and bottled.
In the glass
First, floral and yellow fruity aromas, then the Trebbiano introduces herbs and camomile. Well-structured, full-bodied and richly luxuriant in the mouth, with remarkable tanginess and length.
Vegetable pasta dishes, white meat and fish.
